Chilli Butter Egg and Turkey Toast | High Protein Breakfast

Ingredients:

  • 1 slice of whole-grain bread (30g)
  • 2 slices of turkey breast (50g)
  • 1 tbsp (20g) low-fat cream cheese or garlic and herb cheese spread
  • 1 medium-sized egg
  • 1 tsp (5g) Light butter
  • ½ tsp (3g) Olive Oil
  • 1/8 tsp (0.5g) Honey
  • ½ tsp chilli flakes (adjust to your spice preference)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh herbs (such as parsley) for garnish (optional)

Instructions:

  1. Prepare the Toast:

    • Start by lightly toasting the slice of whole-grain bread. You can do this in a toaster or on a dry skillet over medium heat until it’s golden and crisp.
    • If you prefer a warm turkey slice (like I do), place the turkey breast slices in the skillet over low heat for 1-2 minutes, just until they’re warmed through. Set the turkey aside.
  2. Make the Chilli Butter:

    • In a small pan, melt the butter over medium heat.
    • Once the butter has melted and begins to sizzle slightly, add the chilli flakes. Let the flakes infuse the butter for about 30 seconds to a minute, stirring occasionally to prevent burning.
    • Add a pinch of salt and honey to the chilli butter to enhance the flavors.
  3. Cook the Egg:

    • In the same pan with the chilli butter, carefully crack the egg. Sprinkle with a little salt and freshly ground black pepper.
    • Cook the egg to your preference. For a sunny-side-up egg, cook until the whites are set but the yolk is still runny. For over-easy, flip the egg and cook for an additional 30 seconds to a minute.
    • Once cooked, remove the egg from the pan and set it aside.
  4. Assemble the Toast:

    • Spread a thin layer of low-fat cream cheese or garlic and herb cheese spread on the toasted bread slice.
    • Place the warm turkey breast slices on top of the toast.
    • Gently place the cooked egg over the turkey slices.
  5. Finish with Chilli Butter:

    • Drizzle any remaining chili butter from the pan over the egg and toast. The butter should still be warm, enhancing the flavours of the egg and turkey.
    • Optionally, garnish with fresh herbs like parsley for a burst of color and freshness.
  6. Serve:

    • Serve immediately while the toast is warm, crispy, and the egg yolk is still runny for the best experience. Enjoy this hearty and flavourful toast for breakfast, brunch, or a quick and satisfying meal anytime.

Notes:

  • Spice Level: Feel free to adjust the amount of chilli flakes according to your heat preference. If you like it milder, reduce the chili flakes to ¼ tsp or use a milder chilli powder.
  • Bread Choice: Whole-grain or sourdough bread is recommended for its sturdy texture and slightly tangy flavor, which complements the rich chilli butter and egg.
  • Optional Add-ons: You can elevate this toast by adding a slice of avocado or a handful of spinach leaves under the turkey for extra nutrients, fat and flavour.
