Spicy Honey Mustard Protein Salad

Ingredients
For the salad:
- 100g (about 4 cups) Romaine lettuce
- 25g (about 1 cup) Spring salad mix
- 15g (about 1/2 cup) Kale
- 50g (about 1/2 cup) Sweet potatoes
- 75g (about 3/4 cup) Carrots
- 50g (about 5-7) Cherry tomatoes
- 170g (about 6 oz) Chicken breast
- 10g (about 1 tbsp) Low-fat feta cheese
For the dressing:
- 115g (about 1/2 cup) Low-fat Greek yogurt
- 35g (about 2 tbsp) Honey mustard
- Chilli powder (to taste)
- Sea salt (to taste)
- Black pepper (to taste)
- Garlic powder (to taste)
- 30ml (about 2 tbsp) Water
Instructions
Prep & Cook the Veggies:
- Chop the sweet potatoes and carrots.
- Season with chilli powder, garlic powder, and salt.
- Spray olive oil over them before air frying or baking at 425°F (218°C) for 25-30 minutes. (Cooking time may vary based on the size of your oven or air fryer.)
Cook the Chicken:
- Air fry the chicken breast seasoned with chilli powder, garlic powder, and salt.
Assemble the Salad:
- In a large bowl, mix the chopped/shredded Romaine lettuce, spring salad mix, kale, cherry tomatoes, chicken, sweet potatoes, and carrots.
Prepare the Dressing:
- In a separate bowl, gently whisk together the Greek yogurt, honey mustard, chilli powder, sea salt, black pepper, garlic powder, and water.
Combine:
- Pour the dressing over the salad and mix well.
- Top with low-fat feta cheese.
